  • Holy fruitbomb! This one from José Giraldo and Jorge Correa is the definition of "fruit forward." Grown on an area named "Don Ruiz" after the nearby volcano in Caldas, this coffee provides a veritable fruit medley of berries, lime, and peach. Our roasting approach on this one? Just try not to screw up the wonderful beans!

    Courtesy of Yellow Rooster Coffee Importers, Don Ruiz is a blend of Bourbon, Tabi and Gesha varietals, subjected to a quick 48-hour full cherry, low-oxygen stage before being slow-dried on raised beds at José’s “La Clarita” drying station in Quindío. Combining Jorge’s large farm with José’s fermentation expertise has led to a fantastic cup of coffee.
